Alea Casino announces head chef Vikram Razdan!
Alea Casino is delighted to welcome a new head chef to transform the restaurant at Alea. Vikram Razdan started his Executive Head Chef role earlier this month and will formally launch the new style restaurant and menus at Alea in January 2012.
However Vikram has already wowed members of the public with his pre-launch specials menu. He has injected some much needed creativity and excitement back into the restaurant and his efforts have been met with approval from all our diners in the 2 weeks since he joined Alea.
Vikram comes from a high profile background; he has helped launch a number of Michelin star venues – one such example being LongChamp - a modern French cuisine restaurant run by Richard Neat. He later left the Taj group, to join Carnival – the largest cruise ship company worldwide. Then making a decision to return from sea, Vikram joined the Hilton Group progressing into a head chef role.
Alea is delighted to have Vikram on board and excited about the positive changes the inspirational chef intends to make in the casino based restaurant. This will start with a new and fitting name for the restaurant which will be announced before Christmas and in line with that a series of delicious new menus.
Vikram is thrilled to have joined the team at Alea Casino Nottingham, commenting: “I can’t wait to get started and transform the restaurant and existing menus. I thoroughly enjoy working with fresh ingredients and pairing up western techniques with eastern flavours so this is what diners can expect at the restaurant at Alea moving forward. In my mind, Nottingham has an abundance of restaurants influenced from all corners of the world. What the city does not have is a modern Asian restaurant where West meets East.”
A customer trialling some of Vikram’s test dishes commented “The transformation of the food is amazing. It is beautifully presented, well cooked, and quite delicious!”
Editors can look forward to a special VIP evening in November where the new restaurant name will be announced alongside some of Vikram’s dishes.
The 108 Grill restaurant will continue to operate as normal between 5pm and 11pm daily under Vikram’s management until the re-launch.
